OK, between quail, Chuckar, and Pheasant, what pen raised bird tastes the best when professionally smoked?

Sorry this is a little late, but my first two choices would be pheasant and pheasant, with chukar a distant 3rd. Pheasant has very little fat and is hard to
fry without overcooking. It doesn't grill well either. But smoked? Wow.
Chukar cooks similar to pheasant, but smoked pheasant tastes better than smoked chukar. It's a little darker and gamier, and to me make a good casserole with rice and golden mushroom soup. I've never had smoked quail. It grills so nicely, why smoke it? Same with dove. I have had smoked duck, and it's not bad but I prefer to grill it the same way as dove, with bacon, cheese and jalapeno. |

We are preserve hunting after the first of the year, and will shoot a pheasant and have it smoked
here in Houston . Chukar is a favorite of mine, and I do cook it with the mushroom soup-probably the best eating fowel on the planet. Thanks on the heads up on smoked pheasant. |

Quail tends to dry out too fast on a smoker before cooking all the way through. I've tried lower heat but the wood doesn't release
enough smoke to season the bird. Like scotton said, grilling a quail is hard
to beat. Don't mess with perfection when it comes to cooking a quail. Thow it on the grill with some seasoning on it......yummmm!
